Sometimes nourishment comes in vibrant, unexpected forms. This Rainbow Avocado Tuna Sushi Wrap is a powerhouse of flavor and health. Wrapped in mineral-rich seaweed and packed with colorful veggies like purple cabbage and microgreens, it’s as beautiful as it is nutritious. Probiotic-heavy sauerkraut and kimchi boost gut health, while lean, protein-packed chicken fuels your day. Gluten-free, lectin-free, and dairy-free, it’s the perfect lunch to support your body and nourish your soul, whether you’re at home or on the go.
INGREDIENTS:
– 3 garlic cloves – pinch of pink Himalayan salt – pinch of pepper – 1/2 avocado – 2 tbsp of Bubbies sauerkraut juice (whole ingredient brand with no added sugar) – seaweed paper – purple cabbage – microgreens – celery – Scotty’s Stout vegan kimchi (whole ingredient brand with no added sugar) – optional: sesame seeds or tahini
DIRECTIONS:
1. In a bowl, mix minced garlic, pink Himalayan salt, pepper, sauerkraut juice, avocado, and wild-caught canned tuna until well combined.
2. Lay the seaweed wrap flat and layer with purple cabbage, the tuna mixture, celery, microgreens, sauerkraut, and kimchi.
3. Gently roll the seaweed wrap into a tight sushi roll.
4. Slice the roll into bite-sized pieces.
5. Optional: Drizzle with tahini or sprinkle with sesame seeds for extra flavor.
